We, here, at Pride of India believe that our jasmine rice tastes heavenly with a thai curry but to quench the curiousness of cooking gourmet food, here is our favorite recipe for jasmine rice.
Pre-cook the rice as per the cooking instructions above. Heat 1 tbsp oil in a wok or pan over medium heat. Add 1 tbsp. each of spring onion, minced garlic, chopped green chillis and stir for a minute.
Put 1 cup of carrots and green peas and stir for 2 minutes. Take out the cooked vegetables in a separate bowl and put 1 cup of prawns in the same wok or pan. Add salt and pepper to the prawns and cook each side for 1 minute. Add 1 tsp. white vinegar and mix well.
Stir in the cooked vegetables, the cooked rice, 1 tsp. soy sauce, salt and pepper according to taste. Mix well. Stir for about 5-6 minutes. Garnish with spring onions and eggs sunny side up before serving hot.
