Talking about Indian cuisine and not mentioning Chicken Biryani? Not gonna happen! Chicken Biryani is as Indian as Indian food can get. With just the right seasoning and flavours, it’s one of the favourite foods of Indians and here we are with its easy and delicious recipe for you to enjoy at the comfort of your homes!

1 cup whole milk yogurt
2 tspRed Chili Powder
1/2 tspOrganic Turmeric Ground
2 1/2 pounds bone-in skinless chicken thighs
1 1/2 cups vegetable oil
2 large onions
8 cloves
1/4 tspBlack Pepper Ground
2 large pinchesBiryani Masala Seasoning
1 tbsp finely grated ginger
5 cloves garlic
2 medium tomatoes
1/2 cup cilantro leaves
1/2 cup mint leaves
Whisk salt, chilli powder and turmeric in a bowl. Add the chicken and let it sit for an hour.
Heat the oil in a saucepan. Fry the onions until golden brown. Transfer to a baking sheet to drain. Season with salt.
Wash and rinse the rice. Bring the rice, salt, cloves, cardamom pods, bay leaves, the black pepper and 3 quarts of water to a boil in a large pot over high heat. Cook for 5 mins. Drain and transfer the spices to a bowl.
Preheat the oven to 300 degrees F.
Heat the reserved onion oil in the oven over medium heat. Add cinnamon stick, cumin seeds, remaining cloves, cardamom pods, and bay leaves. Cook until fragrant and brown. Add the ginger and garlic. Add tomatoes, salt, biryani seasoning and cook. Bring to a boil.
Put the chicken on top of the tomatoes. Sprinkle half of the fried onions. Top with rice. Cover the pan and bake until liquid evaporates.
Transfer the biryani to the large platter. And serve hot with fresh cilantro and mint leaves.
