The recipe is wonderfully simple and naturally gluten-free. Start by sautéing your veggies and add a generous shake of Ginger Garlic Seasoning. it fills the kitchen with best aroma that instantly feels like the holidays. Stir in your cooked grains and lentils, then finish with dried cranberries and chopped pistachios for seasonal color.
 This Christmas holiday side dish is guaranteed to have your guests asking for seconds (and the recipe!). It is just perfect for holiday dinners, meal prep, or potluck tables!

Quinoa Rice Salad - Full Recipe

Ingredients

  • 1 cupPride of India Quinoa & Brown Basmati Mix

  • 2 cups water or broth (for cooking the grains)

  • 1 cup mixed veggies, finely chopped (bell peppers, cucumber, cherry tomatoes, carrots, etc.)

  • ¼ cup dried cranberries

  • ¼ cup chopped pistachios

  • 2 tbsp olive oil

  • 1 tbsp lemon juice

  • 1/2 tbsp Pride of India Ginger Garlic Seasoning

  • Salt & pepper to taste

  • Optional: fresh herbs like cilantro

Directions

  1. Cook the Grain Base

    • Rinse the1 cup Quinoa & Brown Basmati Mix. Add to a pot with2 cups water or broth.

    • Bring to a boil, then reduce heat, cover, and simmer for 15 minutes, until fluffy.

  2. Prep the Veggies

    • Finely chop your choice of fresh veggies. Cherry tomatoes, cucumbers, and bell peppers work especially well.

  3. Mix the Dressing

    • Saute the veggies in olive oil, add some lemon juice, Ginger Garlic Seasoning, salt, and pepper. Taste and adjust seasoning.

  4. Mix the Quinoa Rice

    • Add the cooked quinoa basmati mix and toss everything well.

  5. Add Festive Toppings

    • Stir in the dried cranberries,  pistachios and fresh herbs.
