We will cook the shrimp briefly and put in lime juice for tenderizing it. Plus, shrimps are a popular choice in Mexican-style ceviche!

Boil the shrimp in salted water for 2-3 mins until just cooked. Drain and let cool, then dice into pieces.
In a bowl, combine the diced shrimp and fresh lime juice. Cover and refrigerate for at least 1 hour to let the citrus infuse and tenderize the shrimp.
Add the mix-ins: red onion, tomato, cucumber, jalapeno, avocados, fresh cilantro, olive oil and half a spoonful of Seafood Spice Rub.Stir everything together until well mixed.
