A pudding is something that goes as desert on all occasions. Be it a family gathering or a fun house party. It’s a dish that nobody ever gets bored of. OurPride of India’s Thai White Jasmine Rice is here to make that pudding with a twist of raspberry!
2 cups water
1 cupjasmine rice
¼ teaspoonHimalayan Pink Salt
½ teaspoon lemon zest
4 cups whole milk
2 tablespoons unsalted butter
2 teaspoons pure vanilla extract
1 ½ cups fresh raspberries
Take a saucepan, and boil the water. Add rice, salt and lemon zest and simmer on low heat for 15 mins.
Stir the rice and remove from heat to a bowl.
Add 4 cups of milk to the saucepan over medium heat. Add butter and sugar. Add the rice and vanilla extract.
Thicken the mixture for about 20-25 mins.
Stir in the raspberries.
Transfer the pudding to a glass.
Allow to rest in the fridge overnight.
Before serving, sprinkle raspberries and sugar on top.
