Nutty Seed Pudding Parfait Recipe
In a bowl, mix ¼ cup chia seeds and ¼ cup triple omega superseed. Add 1 cup milk, 2-3 tbsp coconut sugar, and 1 tsp vanilla extract. Stir well and refrigerate for 3-4 hours or overnight to allow the mixture to thicken.
In serving glasses or bowls, start by layering nutty granola at the bottom.
Spoon the prepared seed pudding over the granola layer.
Add a layer of Greek yogurt or yogurt alternative on top of the seed pudding.
Scatter fresh berries over the yogurt layer.
Create another layer of nutty granola, followed by seed pudding and yogurt.
Top with more fresh berries and a sprinkle of chopped nuts if desired.
Tri-Color Quinoa Superseed Pudding
In a saucepan, combine the rinsed 1 cup tri-color quinoa and 2 cups of milk. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15-20 minutes, or until the quinoa is cooked and the liquid is absorbed. Stir occasionally to prevent sticking.
In a bowl, mix the mixed ¼ cup superseeds together.
Once the quinoa is cooked, add the remaining 1 cup of milk, ¼ cup coconut flour, and 1 tbsp vanilla extract to the saucepan. Stir well to combine.
Stir in the mixed superseeds into the quinoa mixture. Mix until everything is well incorporated.
Allow the mixture to cool slightly before covering the saucepan. Place it in the refrigerator to chill for at least 2-3 hours, or until the pudding thickens and sets. The chia seeds will absorb liquid and help create the pudding consistency.
Nutty Seed-Coated Chicken Tenders
Preheat the oven to 400°F (200°C).
In a shallow bowl, mix ¼ cup sesame seeds, 2 tbsp triple omega supersede mix, salt, and pepper (as per taste).
Place 2 beaten eggs in another shallow bowl, and ½ cup coconut flour in a third bowl.
Dip 1 pound of chicken tender in the flour, then the beaten eggs, and finally coat with the seed mixture.
Heat a skillet with cooking oil over medium heat.
Cook the chicken tenders for a couple of minutes on each side until the coating is golden brown.
Transfer the chicken tenders to a baking sheet and bake in the preheated oven for about 10-15 minutes, or until they are cooked through.
Seed-Crusted Baked Salmon
Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
In a small bowl, mix 2 tbsp sesame seeds, 1 tbsp chia seeds, salt, and pepper (as per taste).
In another bowl, whisk together 2 tbsp mustard sauce, 1 tbsp honey, and 1 tbsp olive oil.
Brush the mustard mixture onto the top of 4 salmon fillets.
Press the seed mixture onto the mustard-coated side of the salmon fillets.
Place the fillets on the prepared baking sheet and bake for about 12-15 minutes, or until the salmon is cooked through and flakes easily.
