Chicken Ginger Soup

A simple yet comforting, this ginger chicken soup is what you crave on a cold winter day for something to make you feel the warmth and soothe those sore throats!


1 lb chicken thighs, boneless and skinless cut into pieces; 2 tbsp olive oil; 2 tbsps garlic minced by Pride of India, 1 ½ tsp ginger powder by Pride of India;1 tsp of black pepper, salt to taste, ½ cup freshly sliced carrot; 2 cups of chicken broth; 5 to 6 cups of water; 1 cup fresh spinach


· Heat oil in a large pan. Add garlic and ginger. Cook for 3 to 4 minutes. Add black pepper and salt and cook for another 3 to 4 minutes stirring frequently.

· Add the chicken broth, chicken, and water with carrots. Bring it to boil. Reduce the heat and cover the pan. Simmer it for 30 minutes in low heat.

· Add spinach and cook for another 5 to 6 minutes before serving.

Serving Suggestion: You can also add chopped mushrooms at the same time you add the carrots.


Ginger Garlic Dip

This delicious dipping sauce not only complements dumplings but can also be used as a base marinade for tofu, pork, or chicken.


½ cup low sodium soy sauce; 2 tbsp lemon juice; 1 tsp garlic minced by Pride of India; 2 tbsp freshly chopped cilantro; 1tbsp ginger powder by Pride of India; 2 tsp toasted sesame oil


· Combine all the ingredients in a small bowl.

· Cover and keep for at least half an hour to allow all the flavors to blend perfectly.


Ginger Salad Dressing

Ginger lovers will love this salad dressing. It's warming yet not fiery and goes perfectly with any type of greens. So, let’s get dressing.


½ cup extra virgin olive oil; 2 tbsp apple cider vinegar; 2 tbsp Dijon mustard; 1 tbsp honey or maple syrup; 2 tsp of ginger powder by Pride of India; ½ tsp fine sea salt; freshly crushed black pepper


· In a small bowl, whisk all the ingredients together until they are fully blended.

· Taste and adjust if necessary. To balance the tartness or sweetness you can add 1 tsp of apple cider vinegar or maple syrup respectively.

· Use this delicious dressing in any kind of salad you like.
