Gluten Free Arrowroot Biscuits

Ingredients:

· ¼ cup of softened butter; ½ cup of white sugar; 1 egg; ½ tsp of vanilla extract; 1 cup gluten-free flour; ½ cup arrowroot by Pride of India; ¼ tsp of salt

Recipe:

· Preheat oven to 375 degrees F. Grease the baking tray. Beat and combine all the ingredients. Make it into a dough and divide it in half.

· Roll the dough one at a time on a floured surface and cut out 2 ½ inch rounds.

· Bake in the preheated oven for 8 to 10 minutes until they are golden brown.

Chunky Monkey Bread

Ingredients:

· ½ cup coconut flour; ½ cup arrowroot powder by Pride of India; ½ cup melted coconut oil; 1/3 cup sugar; 3 mashed bananas; 1 tsp vanilla extract; 4 eggs; ½ cup roughly chopped dark chocolate; ½ cup chopped walnuts

Recipe:

· Lightly grease a loaf pan with coconut oil and keep it aside. Preheat oven to 350°F.

· Take a medium sized mixing bowl and combine arrowroot powder, coconut oil and baking soda. Take another bowl and mix melted coconut oil, sugar, mashed bananas, eggs and vanilla.

· Add the dry ingredients to the wet ingredients and fold in the walnuts and chocolates. Pour the batter into the greased loaf pan and smooth out the top. Bake for 30 to 40 minutes, until the top becomes golden brown.

· Store the leftovers in an airtight container and refrigerate for up to 1 week.

Arrowroot Milk Pudding

Ingredients:

1 cup arrowroot powder by Pride of India¾ cup of sugar; 2 cups of milk; 1 tsp of cardamom powder; 2 tbsp of chopped nuts; 2 cups of water

Recipe:

· Mix water and arrowroot powder and keep it aside. Boil milk in a heavy-bottomed pan. Once it starts to boil, reduce the flame and add cardamom and sugar.

· Once the sugar dissolves, slowly mix arrowroot powder stirring continuously on low flame.

· Once the smell of the raw arrowroot goes off and the mixture starts to thicken, add chopped nuts.

Turn off the pan. If you wish to have cold pudding, refrigerate after it comes to room temperature.
