A Little About TeaAll tea comes from a tropical, evergreen plant known as the Camellia sinensis plant. The different types of tea are a result of how the fresh tea leaves are processed and their level of contact with oxygen (oxidation). The distinctive color and taste characteristics originate when the tea leaves undergo natural chemical reactions during oxidation. Green tea is not oxidized at all—the leaves are steamed, rolled and dried while black tea is allowed to oxidize for two to four hours. Oolong tea falls somewhere between green and black tea as the leaves are only partially oxidized.

There are thousands of tea gardens or estates around the world and they grow thousands of flavorful variations of tea. Each tea takes its name from the district in which it's grown, and each district is known for producing tea with unique flavor and character, just like wines. The leaf size also separates the tea into different grades. Tea bags utilize smaller sized leaves while the larger sized leaves can be found in packaged loose tea.
